Mark was asking about the apple varieties and OG for this year's CiderFest. Here ya go:
This year’s apple blend consisted of Gala, Cortland, Golden Delicious, Northern Spy, Jonathon, Ida Red, and Jonagolds. The original gravity was measured to be 1.052
Mine took a couple days to get going but is gurgling away quite nicely now!
NC Cider
Hi guys! It's me, Chip, transplanted down here in Newport News, VA.
I got up two Mondays ago (I'm off Sundays & Mondays), took care of a few chores and afterwards, since I had nothing better to do, I took a trip down to the Outer Banks to visit a brew pub called The Outer Banks Brewing Station. It took about two hours to get there but on my way I noticed a cider pressing joint. I thought of you guys and how we always did the cider thing this time of year so I stopped in.
I talked to the guy who runs it. He gave me a tour of his press process (took all of ten minutes) and after tasting his cider (very delicious) I decided to purchase five gallons worth and continue the TRASH tradition of making some cider during this time of year.
So I did. I fermented it with Wyeast WL775 -- English Cider and five tbl of Nutrient. It took off over night and bubbled for about five days! Gonna leave it alone till after the holidays, rack it into a secondary for about a month or so then bottle it. I'm hoping to have a few bottles left when I see you all again.
Oh, BTW, the Outer Banks Brewing Station was average at best. Wouldn't make the trip just to go there again. But the promise of bikini's in the Summer... well...

thanks for the apple info...Mine is still slow to ferment, If it's not going soon I will pitch more yeast.

Cider ferment
Mine was a slow starter as well. I pitched the day after the press and really didn't see any noticeable action until about Wednesday. Last night it was going big guns. I'm thinking I should have waited a little longer to let the sulfites do their thing.
